What is the difference between fresh and frozen seafood?Updated 2 years ago

The term “fresh” holds little meaning in the seafood business – supermarkets often apply it to mean either previously frozen seafood or never-frozen seafood, even if caught many days or weeks prior.

The relationship of freshness to quality comes in how long the fish remains unfrozen between the harvest (or catch) and consumption, as well as the number of times it cycles between frozen and thawed.
